Roulade may be a labour-intensive dish, however it is very often present on Polish tables alongside other traditional dishes, such as cabbage white rolls or the beloved pork chops. Roulades are especially popular in the regions of Silesia from which they originate. The recipes how to prepare delicious roulades are passed in families, from generation to generation. Everyone who has ever tried them returns to them anyway. Polish tables often feature beef roulade, but you can also meet some other versions: poultry rolls/roulade, pork rolls, pork neck rolls, and even deer rolls! The classic version of the roulade is made of beef. How to prepare beef rolls then? The traditional Silesian roulade is made of beef which should be thinly patted beforehand, seasoned with salt and pepper, and then the spicy mustard should be spread on the pieces. Stuff the meat rolls with pickled cucumber, bacon or pork fat and onion. In order to create a perfect shape for the meat rolls, it is worth using the toothpicks to keep them in shape or trussing them with a thread before stewing them in the pan. Meat rolls sprinkled with flour are fried in fat in a hot frying pan, and then put into an ovenproof dish. Pour the roulades with gravy or vegetable stock and stew until soft. It is a rarity, appreciated by many gourmets. Well-made meat rolls are the favourite dish of Poles for Sunday or Christmas dinner. When the flavours mix, a unique taste is created which almost everyone in Silesia has known since childhood.

Another idea for stuffed meat rolls is, for example, to prepare them with a different type of meat and stuffing. Ham roulades with sauerkraut are quite classic and popular. They are prepared in a similar manner as beef rolls above, but they will not need such a long stewing time. Pork meat becomes tender much faster. Beef rolls need to stew for about 2 hours, and pork meat takes half as long. Chicken rolls and turkey breasts rolls will be equally tasty. This is the version loved by the youngest. This recipe can be prepared by coating chicken rolls only in flour, frying them in a pan and stewing them in a pot. There are many recipes and possibilities. The sky is the limit and we are only limited by our imagination. However, meat rolls are most often associated with beef.

What toppings are the best for meat rolls? The classic toppings to the Silesian roulade are Silesian dumplings and red cabbage. A delicious side dish will also be pickled cucumbers, boiled potatoes with dill or cooked buckwheat.
